Ingredients

Serves : 4
  • 200 gms parwal


  • 1 tsp melon seeds( blanched)


  • 7-8 nos blanched almonds


  • 1 nos small onion


  • 1 tbsp dry coconut


  • 2 nos small tomatoes


  • 2 nos green chillies


  • 1 inch ginger


  • 7-8 nos garlic pods


  • 1/2 tsp cummin seeds


  • 1/4 tsp turmeric powder


  • 1/4 tsp coriander powder


  • 1/2 tsp red chilli powder


  • 1 tsp sabzi masala


  • 1/4 tsp garam masala


  • 1 tsp salt to taste


  • 1/4 sprig coriander leaves


  • 1 tbsp oil( i have used olive oil)

Directions

  • Blanch melon seeds and Almonds in hot water n keep it in for 15-20 minutes.
  • Remove Almond skin. Roast coconut and onion in little oil.
  • Take jar add melon seeds, Almonds, onion, coconut, greenchillies, ginger garlic,tomato and grind into smooth paste.
  • Cut parwal into 4 pieces.In kadai add little oil and shallow fry parwal for 2-3 minutes then take it out.
  • Insane kadai crackle cummin seeds, then add grinded paste, add tumeric, coriander powder, chilli powder, sabzi masala,salt n cook for 2-3 minutes.
  • Now add parwal n Cook till it softens.
  • Finally add garam masala and coriander leaves. Switch off the gas. Shahi parwal is ready to serve
  • It can be eaten with steam rice, chapati, puri, or with paratha.
