Blanch melon seeds and Almonds in hot water n keep it in for 15-20 minutes.
Remove Almond skin. Roast coconut and onion in little oil.
Take jar add melon seeds, Almonds, onion, coconut, greenchillies, ginger garlic,tomato and grind into smooth paste.
Cut parwal into 4 pieces.In kadai add little oil and shallow fry parwal for 2-3 minutes then take it out.
Insane kadai crackle cummin seeds, then add grinded paste, add tumeric, coriander powder, chilli powder, sabzi masala,salt n cook for 2-3 minutes.
Now add parwal n Cook till it softens.
Finally add garam masala and coriander leaves. Switch off the gas. Shahi parwal is ready to serve
It can be eaten with steam rice, chapati, puri, or with paratha.
